October 31, 2021: Dark Chocolate Almond Butter Cups

Happy Halloween! Everywhere you look there’s candy galore in the form of mini-sized candy bars and trick-or-treat-sized packages. This week, we’re going to talk about a healthy candy option for you to eat while answering the door.

Here’s a recipe from Primally Inspired for Dark Chocolate Almond Butter Cups that contain no added sugar. The only sugar in these homemade goodies is from the dark chocolate chips.

Ingredients

  • 2 Tbsp pumpkin

  • 2 Tbsp almond butter

  • 2 Tbsp coconut oil, melted

  • ½ tsp vanilla

  • 1 tsp pumpkin spice

  • 1 cup dark chocolate chips (60-70% cacao, I use Lily’s)

  • 1 Tbsp additional coconut oil

Combine pumpkin, almond butter, coconut oil, vanilla, and pumpkin spice together and mix until well combined.

Melt chocolate chips and 1 Tbsp coconut oil over low heat in a double boiler until melted and smooth. Line a muffin pan with 6 cupcake liners. Pour about a Tbsp of chocolate in the bottom of each liner. Swirl the muffin pan around until the chocolate comes up around the liners about a ½ inch.

Freeze for a few minutes until chocolate is all the way hardened. Take out of the freezer and put a little less than a Tbsp of almond butter mixture on top of the hardened chocolate. Put it back in the freezer for about 5 minutes. Take out of the freezer and cover the almond butter mixture with about a Tbsp more of chocolate or until the almond butter mixture is completely covered with the chocolate.

Refrigerate or freeze until chocolate is hardened. Store in the fridge or freezer.
