December 19, 2021: Peppermint Hot Chocolate

Hot chocolate on a cold winter afternoon or evening tastes oh so good! Growing up, homemade hot chocolate was one of my favorite winter treats. While the homemade hot chocolate mix I grew up on was better than a package of Swiss Miss, it was still full of dairy and refined sugar. This week, we’re going to talk about a healthy peppermint hot chocolate recipe.

I wanted to enjoy many mugs of hot chocolate without feeling bad, so I sought out a healthy hot chocolate recipe. You can vary this recipe to your taste and liking. I encourage you to experiment to find the right variation for you and your family.

Ingredients

  • 2 cups almond milk or coconut milk

  • ¼ cup cacao powder

  • 2 Tbsp maple syrup

  • ½ tsp peppermint extract (optional)

  • 1 tsp vanilla extract (optional)

Pour milk into a small saucepan. Place over medium heat and whisk in the cacao powder and maple syrup.

Bring to a simmer, and then reduce heat to medium-low. Simmer, uncovered for 5 to 8 minutes or until the cacao lumps have dissolved.

Remove from heat and stir in the peppermint and vanilla extract. Makes 2 servings.

Enjoy by a fire!
