May 2, 2021: Healthy Cinco de Mayo Tacos

Tacos that are packed full of protein to keep your energy up and your hunger down? Heck, yeah! The filling is versatile, perfect for meal prep and can be stored in the freezer for a later date when you need a quick dinner idea. This week, we’re going to talk about your perfect Cinco de Mayo taco recipe to wow everyone.

Overall the filling has 135 calories and 16 grams of protein per serving. Serve in a corn or whole wheat tortilla or as a lettuce wrap for some extra crisp and freshness and top with some your favorite veggies for an added nutritional bonus.

Ingredients

  • 1 teaspoon extra virgin olive oil

  • 1 small onion, finely chopped

  • 2 jalapeño peppers, seeded and finely chopped

  • 2 cloves garlic, minced

  • 1 pound ground turkey or chicken breast

  • 2 teaspoons chili powder

  • 1 teaspoon cumin

  • 1 teaspoon garlic salt

  • 1 cup salsa

  • 3 tablespoons tomato paste, no salt added

Instructions

  1. Heat oil in large skillet over medium-high heat.

  2. Add onion and jalapeños; cook, stirring frequently for about 5 minutes and until onions are soft.

  3. Add garlic; cook, stirring frequently for 1 minute. Transfer onion mixture to a small bowl and set aside.

  4. Add turkey or chicken to the same skillet; cook, over medium-high heat, stirring frequently to break up meat, for 8 to 10 minutes and until turkey or chicken is no longer pink.

  5. Season with chili powder, cumin, and garlic salt.

  6. Add onion mixture, salsa, and tomato paste. Mix well. Reduce heat to medium-low, stirring frequently for about 8 minutes and until mixture thickens.
