Sweet and Spicy Granola

  • 2 cups rolled oats 

  • ¼ cup almonds 

  • ¼ cup pecans, chopped 

  • ¼ cup walnut pieces 

  • ¼ cup pumpkin seeds 

  • 2 Tbsp chia and/or flax seeds 

  • 3 Tbsp olive oil 

  • 1 ½ Tbsp maple syrup 

  • Pinch of sea salt (to taste)

Preheat the over to 350.

Mix all dry ingredients in a large bowl.

Add olive oil and then the maple syrup and stir well to coat all ingredients.

Pour mixture onto greased baking sheet and bake at 350 degrees for 30 minutes, then turn. Continue cooking 15 to 30 minutes more, for a total of 45 minutes to one hour of total cooking (until browned to your liking).

Cool and break up granola.

Store in resealable container or zip bag.

Can be kept at room temperature or stored in the refrigerator. Keeps for two weeks.
