Ginger Chicken and Broccoli Stir Fry

  • 6 oz. chicken breast, thinly sliced

  • 1 carrot, thinly sliced

  • 1 cup broccoli, broken into small florets

  • 1.5 Tbsp olive oil

  • 2 cloves minced garlic

  • 1 Tbsp grated ginger or ginger paste

  • 5 large basil leaves, chopped

  • Soy sauce to taste

  • 2/3 cup cooked brown rice (optional)

Heat a wok or large skillet with olive oil. Cook carrots, and broccoli until desired doneness.

Once vegetables are cooked, add chicken breast slices and cook until chicken is just about done, about 12 minutes or when the chicken reaches 165°F.

Add garlic, ginger, and soy sauce and toss chicken and vegetables in it for 30 seconds.

Remove from heat and mix in chopped basil leaves. Serve over rice if using.
